Looking for suggestions on the best heavy duty hanger for Bison, Moose, Elk, etc.

I use a noose hanger for elk. It comes in a configuration that allows you to break it in half, so you have "two for the price of one" and that's what I do for deer. For elk, I leave it intact, NOT breaking it in two. Eight lag screws hold it to the backboard in a circular configuration.
I use angle brackets, trace the inside and mark holes, cut out v and a slot between top screw holes. Very strong, cheap, easy to hang!
The Noose hanger...inexpensive and very strong.
I also use a noose hanger for all my moose. I doudle em up and bore out the groove to allow for a bigger bolt ..I double em up cause I had a single one bend before
