Okay so I'm going to practice tanning with a squirrel skin I've cleaned, but the only recipes for a pickle I've found are for a lot more skin than what I'm tanning. As long as I keep the pH of the pickle in the right range, does it matter exactly how much acid I use? Sorry this question probably isn't worded well

Just break down the instructions. Using and or mixing one gallon would be fine as you can reuse your pickle. Mira best to always have a salinity meter to measure your salt content plus pH strips for your acid.
if you need half of this just divide in half.

I've found it's easier to maintain the proper pH if you have at least 2 gallons. I struggled several times with just 1 gallon and was constantly messing with it.
