I live in a Long Island home without A/C. In the warm months, windows and skylights are open for fresh air. My shoulder mount deer are not in direct sun, but in July it can be pretty humid and hot for a couple weeks. I am also constantly having to dust thanks to local traffic.

What should I do and/or NOT do in order to keep these mounts looking good for many years?

Get an air conditioner. Or a dehumidifier.

Keep out of direct sunlight but even indirect sunlight can hurt them . Keep at a constant temperature, a harsh amount in temps changing are not good ,as the mount will expand and contract with those temps . AC would be best if possible.

We have a number of factors that make AC impractical for our house, so the best thing I can probably do is get them down in the basement during the summer months and use the dehumidifier. Glad I asked and thank you both for the input!!
