I'm looking for different ways to add color. I tried water color pencils and had kind of a mess. Does regular colored pencils work. What about crayons.or colored sharpies? I've tried a couple of things that look great until I hit them with sealer then they change colors. I think my black sharpie turned purple. I use pearl ex powders but sometimes I would like a sharp point to put color down with

Maybe look into lightfast markers. Windsor Newton I believe has some.

Also, try pan pastels. Use different tools to apply it to get different effects.

Don’t give up on those water pencils, sounds like you applied to wet a towel when you blotted it out,
    Pastels are wonderful too
    As well as alcohol markers,
    And your powder pigments.
Did a 12 lb brown trout today and used all these.
    Been said before
I even use cigar ashes when painting eyes

Oil paint sticks were all the rage for awhile. Shiva was the brand taxidermy suppliers mostly sold, but there are others.

They are more like crayon in application. But they need to dry completely before sealing, or you'll have problems.

Treasure Gold wax was like a brushable version.

Like lightfast paint pens/markers, these tend to offer some natural control in application, which it sounds like you're after.

What is your process for using water colors?

    For example
Lower part of B trout, I scribble my water color pencil on th fish,
Then take a paper towel and squeeze the water out, I want it damp
Then blot the colors, they blend well with other colors

I bought some water color pens. Played around with them, have not tried on fish yet. Seems when I try to soften them, it washes all off. Need to get some fillet'd fish sides and play some more. I do want to try some pastels as I think you have more control than an airbrush on detail and they can be softened as needed.

Squeeze tightly to remove the water,
I use water color pencils, and blot
Sounds like your rag is too wet
